Yum! We've never featured a recipe before, but we were sent this by the author of The Backpacker Chef, and we know how many of you like food nearly as much as you like travelling! This recipe is ideal for the road, as it's quick, nutritious and easy to prepare. Tuck in and enjoy!
Ingredients
Oil for frying
200g (½ lb) pasta (penne)
2 tomatoes (or a tin of tomatoes)
100g (¼ lb) chorizo sausage, sliced
½ courgette
1 clove garlic
1 tablespoon chopped parsley
1 tablespoon lemon juice
¼ cup grated parmesan cheese
Directions
1. Start cooking the pasta.
2. Slice the courgette and chop the tomatoes, garlic and parsley.
3. Heat oil in pan and fry the sliced chorizo sausage for about 5 minutes until crisp. Add all the rest of the ingredients and heat through.
4. When pasta is ready, drain, add to pan and stir through.
